The first restaurant I ever worked in was an Italian place where they made their own sauce from scratch. Since working there, I’ve tweaked the recipe that I use a bit. I prefer to use fresh tomatoes or at least ones that my grandmother cans on the farm, but I’m all out of both.
So, the Recipe your going to get today will come from cans, but not from Ragu or Prego.
I’m making this today because it’s my wife’s favorite dish that I make and tomorrow is her Big 40th birthday so I intend to surprise her with her favorite meal. Stay tuned for my next recipe, which is her favorite Hershey’s Chocolate Cake that I make.
Tomato Sauce – 1 29oz can
Diced Tomatoes – I prefer Fire Roasted Tomatoes when I’m doing it this way, but you can use just plain diced tomatoes. 2- 14.5oz cans.
Tomato Paste – 1 6oz can.
Yellow Onion – 1
Fresh Mushrooms – 1 package
Italian Sausage – 3-4 Links. You can use mild or hot sausage. Since my kids are eating, I have to use mild.
Hamburger Meat – 1lb
Parmesan Chz.- Dry Powdered – 3 tbs.
Minced Garlic – 3 Tbs.
Italian Seasoning – 3 Tbs.
Cooking oil -1/4 cup
Optional Items (Red Pepper, Garlic Salt, Brown Sugar) If you like it a little spicy, which my wife and I both do, we add some Red Pepper(1 tsp.) when the kids aren’t eating it. If you like it a lil salty, add some Garlic Salt (to taste). Be cautious using it though, because the parmesan cheese is fairly salty. If you have problems with acid indigestion, add a few tbs. of brown sugar to help break up the acidity.
Get the sauce simmering. You can do everything else while its cooking. The longer it simmers, the better it will be.
In a large sauce pan, add tomato sauce, diced tomatoes(drained), and tomato paste. Then add your minced garlic, Italian Seasoning, and Parmesan Cheese. If your going to add the optional items, add them now. Do not turn the sauce on high. You don’t want it sticking to the pot or burning. Turn it on 4 or medium low and let it slow boil. Once it comes to a boil, I cut it down a notch to 3, just enough to keep it bubbling.
Cover your sauce and let it simmer.
Dice your onions, slice your mushrooms and slice your Italian Sausage up into cubes. They should look like meatballs.
In a large frying pan, heat your cooking oil on medium high. When its warm, add your onions and mushrooms. Fry them up til they are soft and a little brown for approximately 5 minutes. Then remove them from the pan and add them to your sauce.
In the same frying pan, add your Italian Sausage. Fry it until they are brown on each side, approximately 10 minutes. When they are done, remove them from pan and add them to sauce pot.
In the same frying pan, add 1lb of hamburger meat. Cook it until its brown/done, approximately 5-10 min. Drain it and add the hamburger meat to the sauce.
Stir your sauce, Cover it and leave it alone. I let mine simmer for at least 2 hours, sometimes for 3-4 hours on medium low, If you’re in a hurry, its technically done at any point, but the longer you let it simmer, the better it will be.
